The Protection Consortium, founded in 2011, brings together 14 producers and has the task of protecting and enhancing this PGI production.

The Salame Felino PGI is a raw and seasoned charcuterie product, obtained from the processing of fresh pork meat belonging to the Large White and Landrace Italiana breeds, other breeds compatible with the Italian heavy pig or derived from the Duroc breed.

The production area of Salame Felino PGI includes all the municipalities of the province of Parma, in the Emilia-Romagna region.

Salame Felino PGI has a cylindrical shape, with one end larger than the other, compact but not elastic consistency and weight between 200 g and 4.5 kg. It has a greyish-white external surface, slightly powdery, determined by the development of a modest amount of native mold. When cut, the slice is ruby red, homogeneous and lean. The taste is sweet and delicate.

The production area of Salame Felino PGI is characterized by hilly and flat areas, lakes and salt mines. Also due to the presence of these salt mines, since 1300 the salting and processing of pork have led to the creation of products recognized both nationally and internationally.
