Typical dish of Christmas Eve. The snails were harvested during the winter, when still hibernating and operculated did not need to be purged.
Tradition has it that stewed snails are the typical Bobbiese dish for Christmas Eve. They are collected with the use of the appropriate hoe only in winter, then operculated, from 01 November to 28 February, as per the Municipal Ordinance of 1987, which prohibits their collection to protect them during the production period.
