Whether or not the aphrodisiac qualities attributed to it by Aristotle and Pythagoras are founded, the Black Truffle of Fragno represents the true treasure of the Calestanese territory. Typical species of Val Baganza whose name derives from the homonymous locality east of the capital recognized as a particular species, the Tuber Uncinatum Chatin protected by a National Law issued in 1991. It is harvested from the end of September throughout the winter with the help of trained dogs that indicate the areas of undergrowth where the truffle can be extracted.
The black truffle of Fragno is consumed mainly fresh and is used in many typical dishes of the gastronomic tradition such as tortelli, tagliatelle, risotto, meat, eggs and polenta.
Its intense and delicate aromacombines perfectly with the taste of Parmigiano-Reggiano cheese.
Every year in autumn is held in Calestano, the National Fair of the black truffle of Fragno.
