  • Typical dishes in Salsomaggiore Terme

The first courses are the foundation of Salsa cuisine: tagliatelle , lasagne , anolini , tortelli . Among these, the most important are the anolini (from the Latin anulus = ring). Legend has it that the anolino was born from the imagination of an innkeeper who, peering through the keyhole of a room, saw the navel of a beautiful wayfarer and wanted to reproduce her graceful features in paste and filling. There is also a great variety of meat-based second courses: beef stew, mixed boiled meat and priest’s hat, the famous boneless veal tip, opened like a sack and stuffed with Parmesan, breadcrumbs, eggs, etc. and the “Rosa Di Parma“, obtained from fillet of beef stuffed with slices of raw ham and parmesan flakes. The side dishes, on the other hand, are based on mushrooms, especially porcini mushrooms. Other mushrooms used are the “San Giorgio” mushrooms, commonly called Dogfish.
