The pattona di Corchia is a typical dessert of the small medieval village of Corchia, in Berceto. The pattona di Corchia was traditionally prepared with chestnut flour ground in the stone mills scattered in the surrounding woods.
Also a staple food of the diet of pilgrims who passed along the Via Francigena, it is still possible to taste this typical dessert of the poor cuisine of the place. Celebrated every year by a festival that animates the village in August, for the occasion the pattona is cooked according to the ancient technique in cast iron texts, with a base of fresh chestnut leaves. In this way it is avoided that the dough sticks to the surface during cooking.
