In Val Taro Parmigiano undergoes a further qualification linked to the territory – the mountains – and to organic farming. So next to the Parmigiano Reggiano aged 24 months there is the mountain Parmigiano Reggiano (with 24 or 36 months of maturation) from organic farming.
