The potato pie, a delight of peasant cuisine, is a recycled dish.
As per tradition, on the day dedicated to San Savino the potatoes, bruised during the harvest, were boiled and reduced to puree.
This was then joined by a sauté of lard, butter, onions and grated cheese. With the filling was stuffed a dough then baked in the oven.
This ancient recipe is still followed today to prepare this specialty for which the municipality of Farini has obtained the Municipal Denomination.
The potato cake can be enjoyed all year round in the municipality of Farini, sold in delicatessens and prepared in all restaurants and farmhouses of the place.
It is excellent enjoyed alone just warm, as an appetizer or as a snack.
Every year in Farini there is the Potato Pie Festival.
