The bortellina or burtlena, a kind of pancake made with water and flour, is one of the bulwarks of Piacenza cuisine of popular inspiration.
In each country it is prepared according to a particular recipe, so there are several variations, all extremely delicious!
That of Bettola, which has obtained the recognition De.Co., looks like a golden and crunchy “puffed” prepared with flour, water and yeast and cooked in a pan with lard.
It gives its best when it is still hot, but if it is prepared by skilled hands it remains crumbly and dry even when it has cooled.
It can be enjoyed alone, or accompanied by DOP Piacenza cold cuts and soft cheeses.
