The “Spongata” is a typical Christmas cake widespread in the territories between Emilia – Romagna, Tuscany and Liguria, consisting of a crispy dough wrapper and a rather spicy soft filling.
The hypotheses about the origin of Spongata are different: from a sweet of Roman tradition, whose recipe has been handed down and preserved in the monasteries during the Middle Ages, to a dessert of Jewish origin, also in consideration of its ingredients, considering that several centers of Jewish culture have spread in ancient times especially in the Emilian territory.
News of the spongata can be traced in documents dating back to the fifteenth and sixteenth centuries referring to the families of the Sforza, the Estensi, the Counts Rossi of Berceto. Today Spongata is produced in different centers, still with artisanal and traditional methods, but in every small town, province or region with completely different recipes.
Corniglio, in the Tuscan-Emilian Apennines in the Province of Parma, is one of these places and the recipe of its Spongata is particularly appreciated and renowned, so much so that every year a festival is dedicated to this typical dessert.
The Festa della Spongata is scheduled in Corniglio (PR), Wednesday 8 December 2021, with a rich program:
