The Appellate Certification Mark Municipal Name (DE.CO.) of Alta Val Tidone it is attributed to the truffle quarried during the period that goes from 25 September to 15 January, and must be beautiful and exemplary: they must be intact, firm, not elastic, ranging from pearl white to pale ocher and dark cream (for white truffles), or from brown to dark brown (for black truffles).
The surface is also important, as it must be smooth and slightly velvety (white truffle) or with more or less marked rustications (black truffle), with an intense scent of hay and honey.
