Spelt (from the Latin far) is the oldest type of cultivated wheat, used by man as nourishment since the Neolithic.
The cultivation of spelt has been re-evaluated in recent years, especially by farms interested in organic production, being it a rustic plant that does not require chemistry for its cultivation, and also for its excellent nutritional properties.
With spelt flour it is possible to make a bread with a taste more aromatic than that of wheat flour, but also excellent pasta.
Spelt is one of the least caloric types of wheat: 100 g provide about 340 kcal; It also contains the essential amino acid methionine, deficient in almost all other cereals.
Spelt contains good amounts of B vitamins and also protein.
